Prepare the Salad Base
Dice the heirloom tomatoes and cut the seasonal stone fruits into bite-sized pieces. Place them in a large mixing bowl.

Prepare the Mint
Rinse the fresh mint leaves and tear them roughly before adding them to the bowl with tomatoes and stone fruits.
Whipped Burrata

Whip the Burrata
In a medium bowl, combine the burrata cheese, heavy cream, and salt. Use a whisk or fork to whip the mixture until it is smooth and creamy. Set aside.
Basil Pistou

Make the Basil Pistou
In a food processor, combine the fresh basil leaves, garlic cloves, pine nuts, olive oil, and salt. Blend until smooth, scraping down the sides as needed.
Assembly

Combine the Salad
Gently toss the diced heirloom tomatoes, stone fruits, and mint leaves together in the mixing bowl.

Add the Whipped Burrata
Dollop the whipped burrata over the salad mixture.

Drizzle with Dressing
In a small bowl, whisk together the balsamic vinegar, extra virgin olive oil, and black pepper. Drizzle this dressing over the salad.
