Waffle Batter
1. Prepare the Waffle Batter
In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, and sugar until well combined.

In another bowl, beat the eggs and then add milk, melted butter, and vanilla extract. Mix until smooth.
3. Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; small lumps are okay.

In a saucepan over medium heat, combine the diced apples, brown sugar, cinnamon, lemon juice, and water.

Cook for about 15-20 minutes, stirring occasionally, until the apples are tender and the mixture has thickened slightly. Set aside.
Vanilla Bean Chantilly
6. Prepare Chantilly Cream
In a mixing bowl, whip the heavy cream until it begins to thicken.
7. Add Sugar and Vanilla
Add powdered sugar and the scraped vanilla bean seeds to the whipped cream. Continue to whip until soft peaks form.
Serve
8. Cook Waffles
Preheat your waffle iron. Pour an appropriate amount of waffle batter onto the hot iron and cook according to the manufacturer's instructions until golden brown.
