Method

Gnocchi Preparation

    Boil Potatoes

    Place the potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender, about 20-25 minutes.

    Make Gnocchi Dough

    Drain the potatoes and let them cool slightly. Peel and mash them in a bowl. Add flour, egg, and salt. Mix until a dough forms.

    Shape Gnocchi

    Divide the dough into sections and roll each into ropes about 1/2 inch thick. Cut into 1-inch pieces. Optionally, use a fork to create ridges.

    Cook Gnocchi

    Bring a large pot of salted water to a gentle boil. Add the gnocchi in batches and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

Lamb Ragu Preparation

    Sauté Vegetables

    In a large skillet, heat olive oil over medium heat. Add chopped onion, carrot, and celery. Sauté until softened, about 5-7 minutes.

    Brown the Lamb

    Add the ground lamb to the skillet. Cook until browned, breaking it apart with a spoon, about 8-10 minutes.

    Add Garlic and Seasoning

    Stir in minced garlic, oregano, salt, and pepper. Cook for another minute until fragrant.

    Add Tomatoes and Wine

    Pour in the crushed tomatoes and red wine. Stir to combine and bring to a simmer.

    Simmer the Ragu

    Reduce heat and let the ragu simmer for 30-40 minutes, stirring occasionally until thickened.
