Marinate the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Coating
In a separate bowl, mix the all-purpose flour with a pinch of salt and black pepper. Set aside.

Fry the Chicken
In a deep skillet or pot, heat the oil over medium-high heat. Remove the chicken from the marinade and let any excess buttermilk drip off. Dredge each piece in flour, pressing lightly to adhere. Once the oil is hot (about 350°F or 175°C), carefully place the chicken in the oil. Fry for 5-7 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
Cabbage Slaw

Make the Slaw
In a large bowl, combine the shredded cabbage and grated carrot. In a smaller bowl, whisk together mayonnaise, apple cider vinegar, salt, and black pepper until smooth. Pour the dressing over the cabbage mixture and toss until well coated. Refrigerate until ready to use.
Jalapeno Aioli

Prepare the Aioli
In a bowl, mix together mayonnaise, minced jalapeno, minced garlic, and lime juice. Season with salt to taste. Stir until well combined and refrigerate until ready to use.
Assembly

Assemble the Sandwich
Toast the burger buns lightly. On the bottom half of each bun, place a fried chicken piece, followed by a slice of Swiss cheese. Top with a generous amount of cabbage slaw and a drizzle of jalapeno aioli. Place the top half of the bun on and serve immediately.
