Main Ingredients

Method

Preparation

  1. 1

    Prepare Ginger

Peel the fresh ginger root and chop it into small pieces.

  2. 2

    Boil Water

In a large pot, bring 4 cups of water to a boil.

  3. 3

    Infuse Ginger

Once the water is boiling, add the chopped ginger to the pot. Reduce the heat and let it simmer for about 30 minutes.

  4. 4

    Strain Mixture

After simmering, strain the mixture through a fine mesh sieve or cheesecloth into a large bowl to remove the ginger pieces.

  5. 5

    Add Sugar and Lemon Juice

While the ginger infusion is still warm, stir in 1 cup of sugar and 2 tablespoons of lemon juice until the sugar is completely dissolved.

  6. 6

    Cool the Mixture

Allow the mixture to cool to room temperature.

  7. 7

    Activate Yeast

In a small bowl, dissolve 1 teaspoon of active dry yeast in a little warm water (about 2 tablespoons). Let it sit for 5 minutes until frothy.

  8. 8

    Combine and Ferment

Once the ginger mixture is cool, add the activated yeast to the bowl and stir well. Pour the mixture into a clean glass fermentation bottle, leaving some space at the top.

  9. 9

    Let it Ferment

Seal the bottle with a lid and let it sit at room temperature for about 48 hours to ferment. Check periodically for carbonation.

  10. 10

    Bottle and Chill

After 48 hours, transfer the ginger beer to clean bottles, leaving about 1 inch of headspace in each bottle. Seal and chill in the refrigerator.

  11. 11

    Serve

Serve chilled, garnished with a slice of lime.
