    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy, about 6-8 minutes. Remove from the skillet and place on paper towels to drain excess fat. Once cooled, crumble the bacon into small pieces.

    Boil the Eggs

    Place the eggs in a saucepan, cover them with cold water, and bring to a boil over medium-high heat. Once boiling, cover the saucepan and remove it from heat. Let the eggs sit for 12-14 minutes.

    Prepare the Pickled Red Onion

    While the eggs are cooking, prepare the pickled red onion. If using store-bought, measure out 1 cup. If homemade, ensure they have been pickled for at least 1 hour prior.

    Peel and Cut the Eggs

    Once the eggs have finished cooking, transfer them to a bowl of ice water to cool for about 5 minutes. Peel the eggs and slice them in half lengthwise.

    Make the Filling

    In a bowl, scoop the yolks from the egg halves and place them in a mixing bowl. Add mayonnaise, Dijon mustard, salt, black pepper, and half of the crumbled bacon. Mix until smooth and creamy.

    Fill the Egg Whites

    Using a spoon or a piping bag, fill each egg white half with the yolk mixture. Top with the remaining crumbled bacon, pickled red onion, and a sprinkle of paprika.

    Arrange the deviled eggs on a serving platter and serve chilled. Enjoy!
