    Cook the Chorizo

    In a skillet over medium heat, add the Caggiano chorizo. Cook for about 5-7 minutes, breaking it apart with a spatula until it is browned and fully cooked.

    Prepare the Refried Beans

    In a small saucepan over low heat, warm the refried beans until heated through. Stir occasionally to prevent sticking.

    Fry the Eggs

    In a separate skillet, heat a little oil over medium heat. Crack the eggs into the skillet and cook for about 2-3 minutes until the whites are set but the yolks remain runny. Season with salt and pepper to taste.

    Slice the avocado in half, remove the pit, and scoop out the flesh. Slice into thin pieces.

    Assemble the Tostadas

    On each tostada shell, spread a layer of warmed refried beans, followed by the cooked chorizo. Top with slices of avocado and a fried egg. Crumble queso fresco over the top.
