Preparing the Salad

Wash and Prepare Mixed Greens
In a large bowl, wash the mixed greens thoroughly under cold water. Spin dry or pat them with a clean kitchen towel to remove excess moisture.

Core and slice the apple into thin wedges or bite-sized pieces. If desired, you can leave the skin on for added texture and nutrients.

Remove the pits from the dates and slice them into smaller pieces to make them easier to distribute throughout the salad.

Toast the Walnuts
In a dry skillet over medium heat, toast the walnuts for about 5 minutes or until they are fragrant and lightly browned. Stir frequently to prevent burning.

Cube the Ewenique Cheese
Cut the ewenique cheese into small cubes or crumbles. This will help it blend well with the other ingredients.

In the bowl with the mixed greens, add the chopped apple, walnuts, dates, and ewenique cheese. Toss gently to combine all the ingredients.
