Preparing the Chicken

Cook the Chicken
In a medium pot, bring water to a boil. Add the chicken breasts and cook for about 15-20 minutes until fully cooked. Remove from heat, shred the chicken, and set aside.
Preparing the Carrots

Slice the Carrots
While the chicken is cooking, peel and slice the carrots into thin sticks or rounds. Set aside.
Making the Ginger-Cashew Vinaigrette

Blend the Ingredients
In a blender, combine cashew nuts, fresh ginger, soy sauce, honey, rice vinegar, olive oil, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning if necessary.
Assembling the Dish

Combine Ingredients
In a large mixing bowl, combine the shredded chicken, sliced carrots, and half of the ginger-cashew vinaigrette. Toss well to coat.

Serve
Plate the chicken and carrot mixture and top with crispy wontons. Drizzle with additional ginger-cashew vinaigrette if desired. Serve immediately.
