    Prep and Dry

    Pat the white cheddar curds dry with paper towels to remove surface moisture. If any curds are very large, cut to bite-size pieces (about 1 to 1.25 inches). Chill the curds in the refrigerator for 15–20 minutes to firm slightly; this helps them hold shape during frying.

    Set up Breading Station

    In one shallow bowl combine the flour, cornstarch, salt, pepper, garlic powder, and paprika. In a second bowl whisk the eggs and milk until smooth. In a third shallow bowl combine the breadcrumbs and chopped almonds, mixing thoroughly so almonds are evenly distributed.

    Bread the Curds

    Working in small batches (6–8 curds at a time), dredge each curd in the flour mixture, shaking off excess. Dip into the egg mixture, letting excess drip back into the bowl. Press into the breadcrumb-almond mixture so each curd is evenly coated, pressing lightly to adhere. For a thicker, more secure coating, repeat the egg and breadcrumb step once to create a double coat. Place breaded curds on a baking sheet and chill 10–15 minutes so coating sets.

    Heat the Oil

    Pour vegetable oil into a heavy-bottomed saucepan or deep skillet to a depth of about 1.5 inches (or use a deep fryer). Heat the oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of breading into the oil — it should sizzle and brown in about 45–60 seconds.

    Fry the Curds

    Fry the breaded curds in batches, careful not to overcrowd the pan. Cook for about 1.5 to 2 minutes per side, turning once, until golden brown and crisp. Remove with a slotted spoon or spider and transfer to a wire rack set over a baking sheet or paper towels to drain. Keep warm in a 200°F (95°C) oven for short periods if needed. Total frying time will be short so the curds remain melty inside.

    Finish

    Let the curds rest 1–2 minutes after frying to avoid very hot molten cheese. Taste one and season lightly with a pinch of salt if desired. If using double coating, ensure they are bubbling and uniformly golden before removing to avoid broken coating.

Sauces & Garnish

    Warm the marinara gently in a small saucepan over low heat or in the microwave for 30–45 seconds until hot but not boiling. Transfer marinara to a small serving ramekin. Place tartar sauce into a separate ramekin. Arrange shredded lettuce on the serving plate as a bed for the curds (this also helps absorb excess oil).

    Plate the fried cheese curds atop the shredded lettuce. Garnish with chopped parsley, scatter a few toasted almond slivers for texture if desired, and serve immediately with marinara and tartar sauce on the side and lemon wedges to squeeze over if preferred.
