Crust

1. Prepare crust mixture

In a medium bowl, combine the finely crushed chocolate sandwich cookies and granulated sugar. Pour in the melted butter and stir until the crumbs are evenly moistened and hold together when pressed.

2. Form crust

Press the crumb mixture firmly and evenly into the bottom and up the sides of a 9-inch pie pan (or a 9-inch springform pan for easy removal). Use the bottom of a measuring cup to compress the crumbs tightly. Chill in the refrigerator for 15–20 minutes to set while you prepare the filling.

3. Soften and fill

Let the chocolate ice cream sit at room temperature for 8–12 minutes until soft but not melted (it should be spreadable). Spoon or spread the softened ice cream into the chilled crust, smoothing the top with a spatula. Return the pie to the freezer for at least 30 minutes to firm up.

Fudge (hot fudge-style filling)

4. Make fudge sauce

Place the chocolate chips, heavy cream, and corn syrup in a small saucepan over low heat. Stir constantly until the chocolate melts and the mixture is smooth and glossy (about 3–5 minutes). Remove from heat and stir in butter and vanilla until incorporated. Let the fudge cool for 5–10 minutes so it thickens slightly but remains pourable.

5. Assemble fudge layer

Pour or drizzle about half of the warm fudge over the frozen ice cream layer, spreading gently so it forms an even chocolate layer. Reserve the remaining fudge for serving or drizzle on top later. Return the pie to the freezer and freeze until the fudge is firm, about 30–45 minutes.

Whipped Cream Topping

6. Make whipped cream

Whip the cold heavy cream, powdered sugar, and vanilla in a chilled mixing bowl with a handheld mixer or stand mixer fitted with the whisk attachment. Beat on medium-high speed until soft to medium peaks form (do not overbeat).

7. Top and decorate

Spread or pipe the whipped cream evenly over the frozen fudge layer. Sprinkle chocolate shavings or chopped chocolate and optional mini chips or nuts over the top. If using flaky sea salt, sprinkle lightly for contrast.

8. Final freeze

Freeze the assembled pie for at least 1 hour (preferably 2–4 hours) to allow all layers to firm up before slicing. For best slices, freeze overnight.

Serving

9. Slice and serve

To slice, let the pie sit at room temperature 5–7 minutes to soften slightly. Use a hot, dry knife (run under hot water and dry between cuts) for clean slices. Serve with extra warm fudge drizzled on top if desired.

10. Storage

Store the Mud Pie covered in the freezer for up to 2 weeks. For best texture, thaw in the refrigerator 10–20 minutes before serving.
