    Chill glass

    Place a coupe or martini glass in the freezer for a few minutes or fill it with the 0.5 cup of ice and cold water while you assemble the cocktail to thoroughly chill the glass.

    Prepare mixing glass

    Fill a mixing glass or cocktail shaker (no shaking required) with the 1 cup of ice to properly cool and dilute the drink while stirring.

    Combine ingredients

    Pour 2.5 oz London dry gin and 0.5 oz dry vermouth into the mixing glass over the ice. Add 2 dashes of orange bitters.

    Stir

    Using a bar spoon, stir the mixture gently for 20–30 seconds (about 20–30 full rotations) until the outside of the mixing glass feels very cold and the drink is properly diluted (approximately 15–20% dilution).

    Prepare glass

    If you chilled the glass with ice and water, dump the ice and water from the coupe or martini glass.

    Strain

    Double-strain the stirred cocktail into the chilled coupe or martini glass using a julep strainer or Hawthorne strainer (and a fine mesh strainer if you used cracked ice). This yields a clear, silk-textured drink.

    Garnish

    Express the oils of a lemon twist over the surface of the drink by holding the twist about 3 inches above the cocktail and pinching to release the oils, then rub the rim with the twist and drop it into the glass.

    Serve

    Serve immediately. The Martin is best enjoyed cold and upright—no straw.
