    Combine and stir

    Place 1/2 tablespoon pure maple syrup in a mixing glass. Add 2 dashes Angostura bitters and (if using) 1 dash orange bitters. Pour in 2 oz rye whiskey (or bourbon). Fill the mixing glass with ice, large cubes preferred, and stir gently for 20–30 seconds until the outside of the glass is well chilled and the drink is slightly diluted (about 15–20% dilution).

    Prepare serving glass

    Place one large ice cube or sphere in an Old Fashioned (rocks) glass.

    Strain and finish

    Strain the chilled cocktail over the prepared ice cube in the serving glass. Express an orange peel over the drink by holding the peel (outer skin facing down) about 2–3 inches above the glass and giving it a firm twist to spray the oils onto the surface. Rub the peel around the rim then drop it into the drink. If using, garnish with a Luxardo or brandied cherry.

    Maple warming (alternative)

    If you prefer a slightly warmed, more aromatic Maple Old Fashioned: gently warm 1/2 tablespoon maple syrup in a small pan with a very small piece of cinnamon (or a pinch of ground cinnamon) until fragrant (do not boil). Add warmed syrup to the cocktail before adding whiskey, then proceed to stir with ice and strain as above.

    Maple smoke finish (optional)

    For a smoked presentation, place the strained cocktail in a short glass or cover the glass briefly. Ignite a small piece of wood chips or use a smoking gun with a few drops of maple syrup on wood and capture the smoke in the glass, allowing it to infuse for 20–30 seconds before unsealing and serving. Take care with open flame and hot materials.
