Prepare the rim
Combine the coarse sea salt and finely grated tonka bean (or nutmeg) on a shallow plate. Rub the outer rim of a rocks glass or coupe with a lime wedge, then dip rim into the salt-tonka mixture to coat evenly. Set glass aside and chill briefly in the freezer while you mix the cocktail.

Add the reposado tequila (2 oz), mezcal (0.5 oz), and tonka bean liqueur (0.5 oz) into a cocktail shaker.

Pour in the fresh lime juice (0.75 oz), fresh grapefruit juice (0.5 oz), and agave syrup (0.5 oz).

Add orange bitters (2 dashes) and tonka or vanilla bitters (1 dash) to the shaker.

Fill the shaker two-thirds full with ice, cap it, and shake vigorously for 12–18 seconds until the shaker is well-chilled and slightly frosted. The goal is good dilution and a silky texture that carries the tonka's perfume.

Double-strain the cocktail into the chilled rimmed rocks glass over one large ice cube or into the chilled coupe without ice, depending on your preferred presentation.

Express a grapefruit twist or lime wheel over the drink to release oils, then either place the twist on the rim or float it in the drink as garnish.

Optionally, grate a tiny additional dusting (a light pinch) of tonka or nutmeg over the top for aromatic lift. Serve immediately.
