    Prepare glass

    If you have a copper mule mug, place it in the freezer for 5–10 minutes to chill. Otherwise, use a rocks glass and fill it with cracked ice to chill while you assemble the drink.

    Mix base

    Add 2 oz bourbon, 1/2 oz fresh lime juice, and 1/4 oz simple syrup (or honey syrup) into a cocktail shaker or mixing glass. Add 2 dashes of Angostura bitters.

    Briefly shake (optional)

    If you prefer a slightly more integrated and colder drink, add a small handful of ice to the shaker and shake briskly for 6–8 seconds. This step is optional; you can also build the drink directly in the mug.

    Assemble

    Discard the chilling ice from the mug if you used it. Fill the chilled mug or rocks glass with fresh cracked ice about three-quarters full. Strain the shaken mixture over the ice (or pour the bourbon, lime juice, simple syrup, and bitters directly over the ice if you skipped shaking).

    Top with ginger beer

    Carefully top the drink with about 4 oz ginger beer. Give the drink one gentle stir (1–2 revolutions) with a bar spoon to combine without losing too much carbonation.

    Garnish and finish

    Garnish with a lime wheel or wedge on the rim and a sprig of fresh mint tucked into the ice (optional). Serve immediately with a straw or short stirrer.
