Oreo Crust

Prepare crust
Preheat oven to 350°F (175°C). Place 24 Oreo cookies in a food processor and pulse until they form fine crumbs (about 1–2 cups of crumbs). Add melted butter, 1 tablespoon sugar, and a pinch of salt. Pulse until mixture is evenly moistened and holds together when pressed.

Form crust in pan
Press the crumb mixture firmly into the bottom and up the sides of a 9-inch (23 cm) pie pan or springform pan to form an even 1/4–1/2-inch crust. Use the bottom of a measuring cup to compact crumbs tightly. Bake crust for 8–10 minutes until set. Remove from oven and cool completely on a rack. Reduce oven temperature or turn off; crust just needs to cool while you make ice cream base.
Mocha Ice Cream Filling

Warm dairy and infuse coffee-cocoa
In a medium saucepan, combine 1 cup whole milk, 2 cups heavy cream, 3 tablespoons sugar, 1 teaspoon instant espresso powder, 2 tablespoons unsweetened cocoa powder, and a pinch of salt. Whisk together and warm over medium heat until just steaming and small bubbles form around the edge (do not boil). Meanwhile, place 4 ounces finely chopped bittersweet chocolate in a heatproof bowl.

Temper egg yolks
In a separate bowl, whisk 4 large egg yolks until smooth. Slowly pour about 1/3 cup of the hot milk mixture into the yolks while whisking constantly to temper. Gradually add another 1/3 cup while whisking until yolks are warmed. Pour the tempered yolks back into the saucepan with the remaining milk mixture, stirring constantly.

Cook custard
Cook the custard over medium-low heat, stirring constantly with a wooden spoon or heatproof spatula, until it thickens slightly and coats the back of the spoon (temperature about 170–175°F / 77–80°C). Do not let it boil.

Finish base
Remove from heat and immediately pour the hot custard over the chopped bittersweet chocolate. Let sit for 1 minute to melt, then stir until smooth and fully combined. Stir in 1 teaspoon vanilla extract. Taste; if you want a stronger coffee note, stir in an additional 1/2 teaspoon instant espresso dissolved in 1 teaspoon warm water. Strain the custard through a fine-mesh sieve into a clean bowl to remove any solids. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Chill in the refrigerator until completely cold, at least 3 hours or overnight.

Churn and freeze
Once chilled, churn the mocha custard in your ice cream maker according to manufacturer’s instructions until it reaches a soft-serve consistency (typically 20–30 minutes). If you don’t have an ice cream maker: place the chilled custard in a shallow metal pan and freeze, stirring vigorously every 30 minutes as it freezes to break up ice crystals, until thick and scoopable (about 2–3 hours). Fold in the roughly chopped 6 Oreo cookies during the last 5 minutes of churning (or after the final stir if using no-churn). Transfer the churned ice cream into the prepared cooled Oreo crust, smoothing the top. Cover tightly with plastic wrap and freeze until firm, at least 4 hours or overnight.
Chocolate Ganache Topping

Make ganache
Place 6 ounces chopped bittersweet chocolate in a heatproof bowl. In a small saucepan, heat 2 tablespoons heavy cream just until it begins to simmer (do not boil). Pour the hot cream over the chopped chocolate and let sit for 1 minute, then stir until smooth. Stir in 1 teaspoon light corn syrup and 1 tablespoon room-temperature butter if using, to add shine and a glossier finish. Allow ganache to cool slightly until pourable but not hot (about 5–10 minutes).

Top the pie
Remove the assembled pie (ice cream in crust) from the freezer and let sit for 3–5 minutes so the surface softens slightly for clean ganache pour. Pour the slightly cooled ganache over the center of the pie, spreading quickly with an offset spatula to the edges so it drips slightly over; work swiftly to avoid melting the ice cream. Return pie to the freezer for at least 30 minutes to set the ganache.
Assembly & Garnish

Final touches
If desired, drizzle 1/4 cup hot fudge or chocolate syrup in a spiral or zigzag over the ganache, pipe or dollop whipped cream around the edge, and sprinkle the roughly chopped 6 Oreos on top. Finish with a light pinch (about 1/4 teaspoon) of coarse sea salt to enhance chocolate flavor. Return to the freezer for 10–15 minutes before slicing to make clean slices.

Slice and serve
To serve, remove the pie from the freezer for 3–5 minutes to soften slightly. Use a hot, dry knife (dip in hot water and wipe dry between slices) to cut neat pieces. Serve immediately. Leftovers should be tightly wrapped and stored in the freezer for up to 2 weeks; allow a few minutes at room temperature before serving for best texture.
