Whisk eggs
Crack the eggs into a medium bowl. Add the milk, half of the salt and half of the pepper. Whisk vigorously until the mixture is homogeneous and slightly frothy, about 30 seconds.

Cook aromatics and gyro meat
While the skillet warms, heat a second skillet over medium-high heat (or use the same skillet if large; wipe excess if necessary). Add a drizzle (about 1 tsp) of olive oil. Add the thinly sliced onion and a pinch of salt; cook, stirring occasionally, until softened and starting to brown, 4–5 minutes. Add the minced garlic and cook 30 seconds until fragrant.

Add the gyro meat slices to the onions and spread into an even layer. Sprinkle the dried oregano and the remaining salt and pepper. Let the meat sear undisturbed 1–2 minutes, then stir and cook 2–3 more minutes until heated through and edges are slightly crisp. Stir in half of the chopped parsley and remove from heat. Keep warm.

Cook the scrambled eggs with gyro
Turn the heat under the egg skillet to low. Pour the whisked eggs into the skillet and let sit undisturbed for 10–15 seconds so edges set. Using a heatproof spatula, gently push the set edges toward the center, tilting the pan to allow liquid egg to reach the edges. When eggs are roughly 70% set (soft and slightly runny), add the warmed gyro meat and onion mixture evenly over the eggs. Fold the meat into the eggs gently so curds form but remain tender. Remove skillet from heat when eggs reach just-cooked, glossy but not dry, about 30–60 seconds more—the residual heat will finish them.

Assemble and serve
Divide the gyro scrambled eggs between two warmed pita halves or plates. Top with crumbled feta, cherry tomato quarters, diced cucumber, the remaining chopped parsley, and a drizzle or dollop of tzatziki (or spooned Greek yogurt). Finish with a sprinkle of fresh dill if using and a pinch of black pepper. Serve immediately.
