    Prepare custard

    In a large mixing bowl or shallow baking dish (large enough to hold 4 slices flat), whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, ground nutmeg, and fine salt until homogeneous and slightly frothy.

    Taste the custard and adjust: add up to 1 tbsp more sugar if you prefer sweeter, or an extra 1/2 tsp cinnamon for more warmth.

    Prep bread

    If using fresh bread, day-old or lightly stale slices (1 to 1 1/2" thick) work best. Arrange 4–6 slices on a cooling rack to air slightly while you heat the pan so they absorb custard without falling apart.

    Soak slices

    Working in batches of 3–4 slices, submerge each slice in the custard for 20–30 seconds per side (longer if bread is denser or very stale). Flip once so both sides soak; do not oversoak to the point of collapse. Let excess drip back into the dish.

    Cook

    Heat a large nonstick skillet or griddle over medium heat. Add 1 tbs butter per 3–4 slices (about 2–3 tbs for larger griddle). When butter is melted and foaming (not browned), place soaked slices in a single layer without overcrowding. Cook 3–4 minutes per side, until deep golden brown and slightly crisp at edges. Adjust heat if they brown too quickly — lower to medium-low. Add more butter between batches as needed.

    Transfer cooked French toast to a warm oven (200°F / 95°C) on a baking sheet to keep warm while you finish remaining batches.

    Arrange the bar

    Set out bowls or small dishes for each topping: maple syrup warmed slightly, powdered sugar in a sifter, berries, banana slices, chocolate chips, toasted nuts, whipped cream, fruit compote, honey, butter pats, and cinnamon sugar. Label or place serving spoons so guests can serve themselves.

    For a restaurant-style finish: dust hot French toast with powdered sugar, sprinkle with cinnamon sugar, add a pat of butter, and top with berries and a drizzle of warm maple syrup or fruit compote. For a decadent option, add whipped cream and chocolate chips or a drizzle of honey and toasted nuts.
