Chill and prepare seafood
If any seafood is hot from cooking, cool quickly: place cooked shrimp, crab meat, clams/mussels and king crab legs in an ice bath (bowl of cold water with ice) for 5 minutes, then drain and pat dry with paper towels. Transfer seafood to a rimmed tray and refrigerate for at least 30 minutes until thoroughly chilled.

Shuck oysters
Shuck oysters just before service or up to 1 hour ahead. Hold the oyster in a towel, insert an oyster knife at the hinge, twist to pop, run the knife along the top shell to free the muscle, remove top shell and loosen the oyster from the bottom shell. Place oysters on a tray bedded with crushed ice immediately to keep cold.

Split king crab legs
Use kitchen shears or a crab cracker to split any whole king crab legs lengthwise so guests can access the meat easily. Arrange meaty sections on the platter and keep chilled on ice until service.

Portion the shrimp, crab meat, clams/mussels and oysters into serving clusters so guests can easily help themselves during display assembly. Reserve the crab meat in a chilled bowl lined with crushed ice if you plan a central mound.

Cut lemons and limes into wedges and keep chilled in the refrigerator until plating. Tuck wedges around the seafood on the display for easy squeezing.

Make cocktail sauce
In a small bowl combine ketchup (1 cup), prepared horseradish (1/4 cup), lemon juice (2 tbs), Worcestershire sauce (1 tsp), hot sauce (1/2 tsp) and salt (1/4 tsp). Stir until smooth. Taste and adjust horseradish or hot sauce for desired heat. Chill sauce in refrigerator until serving. Transfer to a small ramekin for the display.

Make shallot mignonette
Combine minced shallot (2 tbs), red wine vinegar (1/4 cup), champagne vinegar (1 tbs, optional) and freshly ground black pepper (1/2 tsp) in a small bowl. Let sit at least 10 minutes for flavors to marry. Chill and serve in a small dish for oysters.

Make remoulade (optional)
For a creamy remoulade, whisk together mayonnaise (1/2 cup), Dijon mustard (1 tsp), horseradish cream (1/4 cup) and capers (2 tbs, chopped) until smooth. Adjust salt and lemon if desired. Chill in a ramekin and place on the display for crab and shrimp.

On your chilled serving tray bedded with crushed ice, arrange seafood in distinct groups: oysters on the half shell on one side, a mound of chilled shrimp on another, crab legs and split sections fanned out, and bowls or small piles of lump crab meat in the center or in small chilled bowls set on the ice.

Place sauce ramekins (cocktail sauce, mignonette, remoulade, horseradish cream) evenly around the display so each area has access to condiments. Scatter lemon and lime wedges around the seafood and tuck parsley and dill sprigs between items for color and aroma.

Keep extra crushed ice on hand to top up the display and maintain temperature. Replenish any melted ice immediately to keep seafood at safe serving temperature (below 40°F / 4°C).

Label each item if presenting to guests who may have allergies (e.g., "Shrimp", "Crab", "Oysters"). Serve with cocktail forks, small spoons for sauces and napkins.
