Method

Preparing the Roast Chicken

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Season the Chicken

    Pat the whole chicken dry with paper towels, then rub the truffle butter all over the chicken, including under the skin. Season generously with salt and black pepper, then tuck fresh thyme inside the cavity.

    Roast the Chicken

    Place the chicken on a roasting pan and roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C). Baste occasionally with the melted truffle butter.

    Rest the Chicken

    Once cooked, remove the chicken from the oven and let it rest for 15 minutes before carving.

Making the Black Garlic Soubise

  1. 5

    Sauté the Onion

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook until translucent, about 5-7 minutes.

    Add Black Garlic

    Add the black garlic cloves to the saucepan and cook for an additional 2-3 minutes, stirring occasionally.

    Blend the Mixture

    Remove from heat, add the heavy cream, and blend the mixture until smooth. Season with salt to taste.

Sautéing Maitake and Peas

    Cook the Maitake Mushrooms

    In a skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the maitake mushrooms and sauté until golden brown, about 5-6 minutes.

    Add Peas and Ramps

    Add the sweet pickled ramps and English peas to the skillet and cook for an additional 2-3 minutes until the peas are tender.

    Finish with Pea Tendrils

    Remove from heat and gently stir in the pea tendrils just before serving.
