Method
Sweet potatoes
Peel and cut
Peel 3 medium sweet potatoes and cut into 1/4- to 1/2-inch thick fries. Aim for uniform size so they cook evenly. You should end up with about 3 cups of cut fries.
Soak
Place fries in a large bowl of cold water and soak for 30 minutes to remove excess starch (this helps crispness). If short on time, soak at least 15 minutes.
Dry thoroughly
Drain the fries and spread them on clean kitchen towels or paper towels. Pat very dry—any surface moisture will reduce crispness. Let air-dry for 5 minutes while you prepare coating.
Coating & seasoning
Mix dry coating
In a large bowl, whisk together 2 tablespoons cornstarch, 1 teaspoon baking powder, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon black pepper until evenly combined.
Coat fries
Add the dried sweet potato fries to the bowl with the dry mix. Drizzle 2 tablespoons neutral oil over the fries and toss thoroughly until each fry is lightly dusted and the coating clings. If mixture seems dry, add the remaining 1 tablespoon oil and toss again.
Cooking
Oven-baked method (recommended for fewer dishes)
Preheat oven to 230°C (450°F). Line two baking sheets with parchment paper and lightly brush or spray with oil. Spread fries in a single layer with space between pieces (use two sheets if needed). Bake on the middle and upper racks for 12 minutes, then rotate pans and flip fries. Bake for another 8–12 minutes until edges are crispy and color is golden-brown. Total bake time ~20–24 minutes depending on thickness. For maximum crispness, switch oven to broil for 1–2 minutes watching closely to avoid burning.
Shallow-fry method (for extra crispness)
Heat 1/4-inch neutral oil in a large heavy skillet over medium-high heat until shimmering (about 175–190°C / 350–375°F). Working in batches, add fries in a single layer without overcrowding. Cook 3–4 minutes per side until crisp and golden. Transfer to a paper towel-lined tray and season immediately with a light sprinkle of salt. Repeat with remaining fries.
Finish and rest
Once cooked, let fries rest 2 minutes on a rack or paper towel to drain excess oil. Taste and adjust seasoning if needed.
Dipping sauce (optional)
While fries bake or fry, whisk together 1/2 cup mayonnaise, 1 teaspoon hot sauce, 1 teaspoon honey, 1 teaspoon fresh lime juice, and 1/8 teaspoon salt until smooth. Transfer to a small bowl for serving.
