    Prepare the Oysters

    Preheat your oven to 450°F (230°C). Carefully shuck the oysters and place them in a baking dish. Reserve the oyster liquor.

    Cook the Bacon

    In a skillet, cook the bacon over medium heat until crispy. Remove the bacon and chop it into small pieces. Reserve some bacon fat in the skillet.

    Sauté the Vegetables

    In the same skillet with the reserved bacon fat, add the shallots and cook until translucent. Then add the chopped spinach and cook until wilted.

    Make the Filling

    Add the chopped bacon back into the skillet along with the Pernod, breadcrumbs, and half of the Parmesan cheese. Stir well and season with salt and black pepper to taste.

    Fill the Oysters

    Spoon the mixture over each oyster in the baking dish, packing it gently. Sprinkle the remaining Parmesan cheese on top.

    Bake

    Place the baking dish in the preheated oven and bake for about 10-12 minutes, or until the tops are golden and bubbly.

    Serve

    Remove from the oven and serve hot with lemon wedges on the side.
