    Marinate the Chicken

    In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the chicken breasts to the marinade and let them marinate in the refrigerator for at least 30 minutes.

    Cook the Chicken

    Preheat a grill or skillet over medium heat. Remove the chicken from the marinade and cook for 6-7 minutes per side, or until fully cooked and juices run clear. Remove from heat and let rest for a few minutes before slicing.

    Prepare the Spread

    In a mixing bowl, combine crumbled feta cheese and chopped spinach. Mix well to create the Feta & Florentine spread.

    Assemble the Sandwich

    Slice the ciabatta rolls in half. Spread a generous amount of the feta and spinach mixture on the bottom half of each roll. Add sliced chicken, crumbled bacon, and tomato slices. Top with the other half of the ciabatta roll.

    Serve the sandwiches with house fried chips on the side.
