    Braised Short Ribs

    In the same pot, add chopped onions, carrots, and celery. Cook until softened. Add red wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer, then return the short ribs to the pot. Add beef stock, cover, and transfer to the oven. Braise for 3 hours or until tender.

    Roasted Garlic Aioli

    While the short ribs are braising, prepare the roasted garlic aioli. Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast in the oven for 30-40 minutes until soft. Squeeze out the roasted garlic into a bowl, add mayonnaise, and mix well. Season with salt and pepper to taste.

    Assemble the Sandwich

    Spread a generous amount of roasted garlic aioli on each slice of bread. Top with shredded short ribs, sliced tomatoes, and a sprinkle of Gruyere cheese. Place under the broiler for 2-3 minutes until the cheese is melted and bubbly.

    Serve the open-faced sandwiches hot with house-fried potatoes on the side. Drizzle with the reduced red wine demi-glace before serving.
