Preparation Steps

    Prepare the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove and let drain on paper towels.

    Caramelize the Onions

    In the same skillet, add sliced onions and a pinch of salt. Cook over low heat, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes.

    Form the Patties

    Divide the ground A4 Wagyu into two equal portions and form into 8oz patties. Season both sides with salt and black pepper.

    Cook the Patties

    In a grill or skillet, cook the patties over medium-high heat for about 4-5 minutes per side or until they reach your desired doneness.

    Assemble the Burger

    On the bottom half of the burger bun, spread a layer of Pancho sauce, place the cooked patty, add crispy bacon, caramelized onions, and crumble blue cheese on top. Finish with the top half of the bun.

    Serve the LCH Pancho Burger with house-fried potatoes on the side.
