Prepare the Potatoes
Wash and scrub the Idaho potatoes thoroughly. Cut each potato into wedges.

First Cooking (Boiling)
In a large pot, bring water to a boil. Add the potato wedges and cook for 10-12 minutes until slightly tender. Drain and let cool.

Second Cooking (Frying)
In a deep skillet or fryer, heat vegetable oil over medium-high heat. Once the oil is hot, carefully add the potato wedges in batches and fry them for 4-5 minutes until they are golden brown and crispy. Remove them and place on paper towels to drain excess oil.

While they are still hot, season the fried potato wedges with salt and black pepper to taste.
