Soup Preparation

    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced sweet onions and cook, stirring frequently, until they are caramelized and golden brown (about 30-40 minutes).

    Add Garlic and Liquids

    Stir in the minced garlic and cook for an additional minute. Then, add the beef broth, veal reduction, dry sherry, thyme, bay leaf, salt, and pepper. Bring to a simmer.

    Simmer the Soup

    Reduce the heat to low and let the soup simmer for at least 30 minutes to allow the flavors to meld. Adjust seasoning as necessary.

Crouton Preparation

    Prepare the Croutons

    Preheat the oven to 350°F (175°C). Brush the baguette slices with olive oil and place them on a baking sheet. Bake for about 10-15 minutes until they are golden and crispy.

    Add Cheese

    Remove the croutons from the oven, sprinkle the gruyere cheese on top of each slice, and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
