    Caramelize the Onions

    In a large pot, heat the butter and olive oil over medium heat. Add the sliced sweet onions, salt, and pepper. Cook, stirring frequently, until the onions are soft and caramelized, about 30-40 minutes.

    Add Sherry and Broth

    Once the onions are caramelized, add the sherry wine and cook for about 5 minutes, scraping up any browned bits from the bottom of the pot. Then add the beef broth and thyme. Simmer for an additional 20 minutes.

    Prepare the Croutons

    While the soup is simmering, preheat your oven to 350°F (175°C). Place the baguette slices on a baking sheet, top with grated Gruyere cheese, and bake until the cheese is bubbly and golden, about 10 minutes.

    Serve the Soup

    Ladle the hot soup into bowls and top with the Gruyere croutons. Garnish with additional thyme if desired.
