    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion, celery, carrot, and garlic. Sauté until the vegetables are soft and translucent, about 5-7 minutes.

    Add Flour

    Sprinkle the flour over the sautéed vegetables and stir well to combine. Cook for another 2 minutes to eliminate the raw flour taste.

    Add Broth and Simmer

    Gradually add the chicken broth while stirring to avoid lumps. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender and puree until smooth.

    Add Cream and Seasoning

    Stir in the heavy cream, brandy, cayenne pepper, salt, and black pepper. Heat through but do not bring to a boil.

    Fold in Crab

    Gently fold in the lump crab meat and allow it to heat through for about 5 minutes.

    Ladle the bisque into bowls and garnish with chopped chives. Serve hot.
