    Prepare the Peaches

    Preheat the grill to medium heat. Cut the peaches in half and remove the pits. Brush the cut sides with olive oil and sprinkle with salt and pepper. Grill the peaches for about 3-4 minutes on each side until they are nicely charred and tender.

    Make the Brandy & Star Anise Reduction

    In a small saucepan, combine the brandy and star anise. Bring to a simmer over medium heat and allow it to reduce by half. This should take about 10-15 minutes. Once reduced, remove from heat and strain out the star anise.

    Prepare the Mint Oil

    In a small blender or food processor, combine the fresh mint leaves with olive oil. Blend until smooth. Strain through a fine mesh sieve if you prefer a clearer oil.

    Assemble the Dish

    On a serving plate, arrange the grilled peach halves. Tear the burrata mozzarella into pieces and place it over the peaches. Drizzle the brandy reduction over the top, and garnish with Marcona almonds and red watercress. Finish with a drizzle of mint oil.
