    Prepare the Pork Belly

    Preheat the oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern without cutting into the meat. Rub the pork belly with olive oil, salt, and black pepper. Place the pork belly on a roasting tray and roast in the oven for about 2.5 to 3 hours, or until the skin is crispy and the meat is tender.

    Make the Compote

    While the pork is roasting, peel and dice the parsnips and apples. In a saucepan, combine the chopped parsnips, diced apples, bourbon, and maple syrup. Bring to a simmer over medium heat and cook until the parsnips and apples are soft and caramelized, about 15-20 minutes. Stir in the chopped rosemary and season with salt and pepper to taste. Remove from heat.

    Serve

    Once the pork belly is done, remove it from the oven and let it rest for about 10 minutes. Slice the pork belly and serve with the crispy parsnip and apple bourbon compote drizzled over the top.
