    Prepare the Potatoes

    Peel and chop the potatoes into quarters. Boil in salted water until tender, about 15-20 minutes.

    Roast the Garlic

    While the potatoes are boiling, take the garlic cloves, wrap them in foil with a drizzle of olive oil, and roast in the oven at 400°F (200°C) for about 20 minutes.

    Sauté the Haricot Vert

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the haricot vert and sauté for about 5-7 minutes until tender. Season with salt and pepper.

    Prepare the Smashed Potatoes

    Once the potatoes are tender, drain them and return to the pot. Squeeze the roasted garlic cloves into the potatoes, add butter and milk, and mash until creamy. Season with salt and pepper to taste.

    Cook the Filet Mignon

    Season the filet mignon with salt and black pepper. Heat a skillet over high heat, add a little olive oil, and sear the steak for about 4 minutes on each side for medium-rare. Adjust cooking time for desired doneness.

    Plate the smashed potatoes, add the sautéed haricot vert, and place the filet mignon on top. Drizzle with demi-glace and serve immediately.
