    Prepare the Ingredients

    Start by washing the tomatillos under running water to remove any sticky residue. Peel the outer husks and chop them into quarters. Remove the seeds from the jalapeño and green habanero (if desired for less heat), and chop them finely. Peel and chop the onion into small pieces. Mince the garlic cloves.

    Cook the Tomatillos and Peppers

    In a medium saucepan, add the chopped tomatillos, jalapeño, and green habanero. Add a pinch of salt and enough water to cover the ingredients. Bring to a boil over medium heat, then reduce to a simmer. Cook for about 10-15 minutes or until the tomatillos are tender.

    Sauté the Aromatics

    In a separate skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Combine and Blend

    Once the tomatillos and peppers are cooked, drain any excess water and add them to the skillet with the sautéed onion and garlic. Squeeze in the juice of the lime and stir to combine. Use an immersion blender or transfer to a blender to puree until smooth. Taste and adjust seasoning as necessary.
