Method

Preparing the Steak

  1. 1

    Season the Ribeye

Rub the ribeye steaks with olive oil, then season both sides generously with salt, black pepper, and garlic powder.

  2. 2

    Preheat the Grill

Preheat your grill to high heat (about 450-500°F or 232-260°C).

  3. 3

    Grill the Steak

Place the seasoned ribeye steaks on the grill. Grill for 4-5 minutes on one side, then flip and grill for another 4-5 minutes for medium-rare, adjusting time for your preferred doneness. Remove from the grill and let rest for 5 minutes.

Preparing Fajita Veggies

  1. 4

    Slice the Veggies

Slice the bell peppers and onion into thin strips.

  2. 5

    Sauté the Veggies

In a skillet, heat olive oil over medium heat. Add the sliced bell peppers and onion, sprinkle with salt, black pepper, and cumin. Sauté for about 8-10 minutes until vegetables are tender and slightly charred.

Making Tomatillo Sauce

  1. 6

    Prepare Tomatillos

Remove the husks from the tomatillos and rinse them under water.

  2. 7

    Blend the Sauce

In a blender, combine tomatillos, jalapeño (seeded for less heat), cilantro, lime juice, and salt. Blend until smooth. Adjust seasoning to taste.

Assembling the Dish

  1. 8

    Plate the Steak

Slice the rested ribeye steak against the grain. Place on a serving platter.

  2. 9

    Add Fajita Veggies

Top the sliced steak with the sautéed fajita veggies.

  3. 10

    Drizzle Tomatillo Sauce

Drizzle the tomatillo sauce over the steak and veggies.

  4. 11

    Add Toppings

Sprinkle with crumbled queso fresco and drizzle with Mexican crema. Garnish with fresh cilantro.
