Method

Hand-Cut House Fries

  1. 1

    Prep the Potatoes

Wash and peel the Russet potatoes. Cut them into thick fries, about 1/4 inch wide.

  2. 2

    Soak the Fries

Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

  3. 3

    Heat the Oil

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

  4. 4

    Fry the Potatoes

Carefully add the soaked fries to the hot oil in batches. Fry for about 4-6 minutes or until golden brown and crispy.

  5. 5

    Season

Remove fries from the oil, drain on paper towels, and season with salt and pepper to taste.

Sweet Potato Waffle Fries

  1. 6

    Prep the Sweet Potatoes

Wash and peel the sweet potatoes. Cut them into waffle fry shapes using a waffle fry cutter.

  2. 7

    Coat with Cornstarch

In a large bowl, toss the waffle-cut sweet potatoes with cornstarch, salt, and paprika until evenly coated.

  3. 8

    Heat the Oil

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

  4. 9

    Fry the Waffle Fries

Carefully add the sweet potato waffle fries to the hot oil in batches. Fry for about 4-5 minutes or until crispy.

  5. 10

    Drain and Season

Remove the fries from the oil, drain on paper towels, and season with salt to taste.

House-Made Potato Chips

  1. 11

    Prep the Potatoes

Wash and peel the Russet potatoes. Slice them thinly using a mandolin slicer.

  2. 12

    Heat the Oil

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

  3. 13

    Fry the Chips

Carefully add the potato slices to the hot oil in batches. Fry for about 2-3 minutes or until golden and crispy.

  4. 14

    Drain and Season

Remove chips from the oil, drain on paper towels, and sprinkle with salt to taste.

Dipping Sauces

  1. 15

    Prepare Chipotle-Red Pepper Mayo

In a mixing bowl, combine mayonnaise, chipotle sauce, and red pepper flakes. Mix well and set aside.

  2. 16

    Prepare Mango-Curry Ketchup

In another bowl, combine ketchup, curry powder, and mango puree. Mix until smooth and well combined.
