Prepare the Cheese Mixture
In a large mixing bowl, combine the shredded cheddar cheese, softened cream cheese, shredded Monterey Jack cheese, sour cream, diced tomatoes with green chilies, and diced jalapeños.

Sprinkle in garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Transfer the cheese dip to a serving bowl and keep warm.
Crispy Corn Tortilla Chips

Cut the Tortillas
Using a sharp knife or pizza cutter, cut each corn tortilla into 6 wedges.

In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add tortilla wedges in batches to the hot oil. Fry until golden brown and crispy, about 2-3 minutes per batch. Use a slotted spoon to remove the chips and drain on paper towels.
