Method

Preparing the Salmon

    Heat the Skillet

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

    Season the Salmon

    Season the salmon fillets with salt and black pepper on both sides.

    Cook the Salmon

    Once the oil is hot, add the salmon fillets to the skillet, skin-side down. Cook for 4-5 minutes, then flip and cook for another 4-5 minutes until the salmon is cooked through and flakes easily with a fork.

Making the Vera Cruz Sauce

    Sauté the Aromatics

    In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Add Vegetables

    Add the diced red bell pepper, and cook for 3-4 minutes until softened.

    Combine Other Ingredients

    Stir in the diced tomatoes, green olives, capers, and lemon juice. Cook for an additional 5-7 minutes until the sauce is heated through and slightly thickened.

    Finish with Cilantro

    Remove from heat, and stir in the chopped fresh cilantro.

Serving

    Plate the Salmon

    Place each salmon fillet on a plate and generously spoon the Vera Cruz sauce over the top.

    Serve Immediately

    Serve hot with your choice of side dishes, such as rice or steamed vegetables.
