Method

Steak Preparation

  1. 1

    Season the Steak

Rub the ribeye steaks with olive oil, salt, black pepper, and garlic powder on both sides. Let the steaks sit at room temperature for about 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to high heat, about 450°F (232°C). Ensure the grates are clean and well-oiled.

  3. 3

    Grill the Steak

Place the seasoned ribeye steaks on the grill. Cook for 4-5 minutes on each side for medium-rare or until your desired doneness.

Fajita Veggies Preparation

  1. 4

    Slice the Veggies

Slice the bell peppers and onion into thin strips.

  2. 5

    Sauté the Veggies

In a skillet, heat olive oil over medium heat. Add the sliced bell peppers and onion, sprinkle with cumin and salt. Sauté for 5-7 minutes until softened.

Tomatillo Sauce Preparation

  1. 6

    Prepare the Sauce

In a saucepan, combine tomatillos, garlic, and onion, and cover with water. Bring to a boil and cook for 10 minutes until soft. Drain and let cool.

  2. 7

    Blend the Sauce

Add the cooked tomatillos, garlic, onion, cilantro, lime juice, and salt to a blender. Blend until smooth.

Assembly and Serving

  1. 8

    Plate the Dish

On a serving plate, place the grilled ribeye steak and top with sautéed fajita veggies.

  2. 9

    Add Toppings

Drizzle with tomatillo sauce, sprinkle with crumbled queso fresco, add a dollop of Mexican crema, and garnish with fresh cilantro.
