Method

Fried Chicken

    Marinate Chicken

    In a large bowl, combine the buttermilk and salt. Add the chicken pieces, making sure they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

    In another bowl, mix the flour, paprika, garlic powder, onion powder, salt, and black pepper. This will be your breading station.

    Heat Oil

    In a deep skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Bread Chicken

    Remove chicken from buttermilk, letting excess liquid drip off. Dredge each piece in the flour mixture, pressing gently to adhere. Shake off excess flour.

    Fry Chicken

    Carefully place the breaded chicken pieces in the hot oil. Fry for about 12-15 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C).

    Drain Chicken

    Remove the fried chicken and place on a paper towel-lined plate to drain excess oil. Keep warm while preparing sides.

Jicama-Jalapeño Slaw

    Mix Slaw Ingredients

    In a large bowl, combine the jicama, jalapeño, grated carrot, cilantro, lime juice, and salt. Toss until well combined.

    Cover the slaw and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Pico De Gallo

    In a medium bowl, mix together the diced tomatoes, red onion, cilantro, minced jalapeño, lime juice, and salt. Stir until combined.

    Let the pico de gallo sit for about 15 minutes before serving to enhance the flavors.

Jalapeño Ranch Sauce

    Mix Sauce Ingredients

    In a small bowl, combine the ranch dressing, minced jalapeño, lime juice, and chopped cilantro. Mix until smooth.

    Refrigerate the jalapeño ranch sauce until ready to serve.

Queso Fresco

    Prepare Queso Fresco

    Crumble the queso fresco and set aside for serving.

Fresh Jalapeño
