Veggie Patty Preparation

Combine Ingredients
In a large bowl, combine cooked quinoa, mashed black beans, grated carrots, chopped bell pepper, chopped onion, minced garlic, ground cumin, paprika, egg, breadcrumbs, salt, and black pepper.

Form Patties
Mix all ingredients well until combined. Form the mixture into 4 equal-sized patties.

Cook Patties
In a non-stick skillet over medium heat, add a bit of oil. Cook each patty for about 4-5 minutes on each side, or until golden brown.
Basil Aioli Preparation

Mix Ingredients
In a small bowl, whisk together mayonnaise, finely chopped basil, lemon juice, and garlic powder until smooth and well combined.
Assembly

Prepare Buns
Toast the burger buns lightly if desired.

Assemble Burger
Spread a generous amount of basil aioli on the bottom half of each bun. Place the cooked veggie patty on top, followed by a slice of double-cream brie, a handful of arugula, a few slices of sweet red onion, and a generous spoonful of pico de gallo.
