Pimento Cheese Preparation

    Make the Pimento Cheese

    In a mixing bowl, combine the shredded sharp cheddar cheese, softened cream cheese, mayonnaise, diced pimentos, garlic powder, onion powder, salt, and black pepper. Mix until smooth and well combined. Set aside in the refrigerator until ready to use.

    Marinate the Onions

    In a bowl, whisk together the apple cider vinegar, sugar, salt, and water until the sugar and salt are dissolved. Add the thinly sliced sweet onions to the bowl, ensuring they are submerged in the liquid. Cover and let marinate in the refrigerator for at least 30 minutes.

Fried Green Tomatoes Preparation

    Prepare and Fry Tomatoes

    Set up a breading station by placing the cornmeal and flour in separate shallow dishes. In another bowl, pour the buttermilk and add salt and black pepper. Dip each slice of green tomato first in the buttermilk, allowing excess to drip off, then dredge in the cornmeal followed by the flour. Heat oil in a frying pan over medium heat. Once hot, fry the breaded tomato slices for about 3-4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

    In a small bowl, mix together the mayonnaise, ketchup, hot sauce, Worcestershire sauce, paprika, and salt. Stir until well blended and adjust seasoning to taste. Set aside.

    Cook the burger patties on a grill or skillet over medium-high heat until they reach your desired doneness. This usually takes about 4-5 minutes per side for medium.

    To assemble the burgers, slice the buns in half and toast them lightly if desired. Spread a generous amount of pimento cheese on the bottom half of each bun. Place the cooked burger patty on top, followed by a few slices of fried green tomato, a handful of marinated sweet onions, and a portion of shredded lettuce. Drizzle spicy comeback sauce on top and cover with the top half of the bun.
