Prepare the Pork Belly

Seasoning the Pork
In a bowl, combine salt, black pepper, cumin, and garlic powder. Rub the spice mixture all over the pork belly, ensuring it is evenly coated.

Cooking the Pork
Heat olive oil in a large skillet over medium-high heat. Once hot, add the pork belly and sear on all sides until golden brown, about 5-7 minutes per side.

Baking the Pork
Preheat the oven to 300°F (150°C). Transfer the seared pork belly to a baking dish and cover it with foil. Bake for approximately 2-3 hours, or until the meat is tender and the fat has rendered.

Resting the Pork
Remove the pork belly from the oven and let it rest for 30 minutes before slicing.
Assemble the Cuban Sandwich

Cutting the Bread
Slice the Gambino's French bread loaf in half lengthwise. Hollow out a bit of the inside to create space for the fillings.

Layering the Ingredients
On the bottom half of the bread, spread a layer of yellow mustard. Add the sliced pork belly, followed by the ham, Swiss cheese, and dill pickles.

Finishing the Sandwich
Place the top half of the bread on the sandwich. Press down gently to compact the layers.

Grilling the Sandwich
Heat a panini press or skillet over medium heat. Place the sandwich in the press or skillet and grill for about 5-7 minutes, or until the cheese is melted and the bread is golden brown.

Remove the sandwich from the heat, slice it into portions, and serve immediately.
