Prepare the Onions
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes. Set aside.

Sauté the Mushrooms
In the same skillet, add another tablespoon of olive oil. Once hot, add the wild mushrooms and sauté for about 5-7 minutes, or until they are tender and have released their moisture. Season with salt, black pepper, and crushed red pepper flakes. Stir in the summer truffles and cook for an additional minute. Remove from heat.

Combine Cheese and Prepare Dish
Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the mozzarella, gorgonzola, parmesan, and fontina cheeses. Mix well to combine.

Layer Ingredients
Spread half of the cheese mixture on the bottom of a baking dish. Layer the caramelized onions on top, followed by the sautéed mushroom and truffle mixture. Top with the remaining cheese mixture.

Bake
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
