In a large mash tun, combine the corn, rye, and malted barley.

  2. 2

    Add Water

Heat the water to 165°F (74°C) and pour it over the grain mixture. Stir well to ensure all grains are saturated.

    Let it Rest

Allow the mash to rest for 60 minutes, maintaining the temperature around 150°F (65°C).

Fermentation

  1. 4

    Cool the Mash

After resting, cool the mash to around 70°F (21°C).

  2. 5

    Add Yeast

Sprinkle the yeast over the cooled mash and stir gently to incorporate.

  3. 6

    Ferment

    Distill

Heat the still, collecting the distillate until it reaches an alcohol content of approximately 60-70%.

    Fill the Barrels

Transfer the distilled spirit into new charred oak barrels for aging.

  2. 10
