    Marinate the Redfish

    In a small bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Place the redfish fillets in a shallow dish and pour the marinade over them. Ensure the fish is well-coated, cover, and refrigerate for at least 30 minutes.

    Prepare the Red Onions

    Slice the medium red onion into thin rings. If desired, marinate the onions in a bit of vinegar for 10-15 minutes to mellow their flavor.

    Cook the Bacon

    In a skillet over medium heat, cook the applewood-smoked bacon slices until crispy, about 5-7 minutes. Remove and drain on paper towels.

Grilling

    Grill the Redfish

    Preheat your grill to medium-high heat. Remove the redfish from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.

    On the bottom half of each sandwich bun, spread 2 tablespoons of basil aioli. Layer with grilled redfish, a slice of cheddar cheese, crispy bacon, lettuce, tomato slices, and marinated red onion. Top with the other half of the bun.
