Preparing the Shrimp

Marinating the Shrimp
In a large bowl, combine the buttermilk, cajun seasoning, salt, and black pepper. Add the shrimp and toss to coat. Cover and refrigerate for at least 30 minutes.

Coating the Shrimp
In another bowl, mix together the flour and cornmeal. Remove the shrimp from the refrigerator, allowing excess buttermilk to drip off. Dredge each shrimp in the flour and cornmeal mixture, making sure to coat evenly.
Frying the Shrimp

Heating the Oil
In a heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Frying the Shrimp
Carefully add the coated shrimp in batches to avoid overcrowding. Fry until golden brown and cooked through, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.
Making the Chipotle Remoulade

Combining Ingredients
In a bowl, mix together the mayonnaise, minced chipotle peppers, lemon juice, garlic powder, and salt until well combined. Adjust seasoning to taste.
Assembling the Poboys

Preparing the Bread
Slice the Gambino's French bread lengthwise, leaving one side attached to create a hinge.

Building the Poboys
Spread a generous amount of chipotle remoulade on the inside of the bread. Add a layer of shredded lettuce, followed by the sliced tomato, and finally top with the fried shrimp. Drizzle more remoulade over the shrimp if desired.
