Method

Preparing the Marinara Sauce

    Heat Oil

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat.

    Cook Garlic

    Add 2 minced garlic cloves and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasoning

    Pour in the can of crushed tomatoes. Stir in 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of sugar.

    Simmer Sauce

    Bring the mixture to a simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally.

Frying the Calamari

    Prepare the Breading

    In a large bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of paprika, and 1 teaspoon of garlic powder. Mix well.

    Soak Calamari

    In another bowl, pour 1 cup of buttermilk over the calamari rings. Allow them to soak for about 10 minutes.

    Dredge Calamari

    Remove the calamari from the buttermilk and let excess drip off. Dredge the calamari in the flour mixture until fully coated.

    Heat Oil for Frying

    In a large, deep skillet or Dutch oven, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Calamari

    Carefully add the breaded calamari to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes until golden brown.

    Drain and Serve

    Remove the fried calamari using a slotted spoon and drain on paper towels. Serve hot with the marinara sauce.
