Preparing the Shrimp

Cook the Shrimp
Heat a skillet over medium-high heat. Add the marinated shrimp and sauté for 5-7 minutes until the shrimp are pink and opaque. Remove from heat and set aside.
Frying the Green Tomatoes

Prepare the Dredging Station
In three separate shallow dishes, place the cornmeal, all-purpose flour, and a mixture of beaten eggs and milk. Season each with salt and black pepper.

Fry the Tomatoes
Heat oil in a large skillet over medium-high heat. Fry the coated tomato slices in batches for 3-4 minutes on each side or until golden brown. Drain on paper towels.
Assembling the Dish

Layer the Ingredients
On a serving platter, place a layer of the fried green tomatoes. Top with the sautéed Florida rock shrimp.

Add Cheese and Sauce
Sprinkle the shredded fontina cheese and sliced fresh mozzarella over the shrimp, followed by the cooked bacon lardons. Drizzle with Romesco sauce.

Serve immediately while warm, garnished with fresh herbs if desired.
