Prepare the Crust

    Mix the Crust Ingredients

    In a medium bowl, combine chocolate graham cracker crumbs, granulated sugar, and melted butter. Mix until all crumbs are well coated with butter.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Set aside.

Prepare the Filling

    Blend the Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar and mix until well combined.

    Add Coffee and Vanilla

    Pour in the brewed coffee and vanilla extract. Mix until fully incorporated.

    Add Eggs

    Add eggs one at a time, mixing well after each addition until the mixture is smooth and creamy.

Bake the Cheesecake

    Pour the Filling

    Pour the cheesecake filling over the prepared crust in the springform pan.

    Bake

    Preheat the oven to 325°F (160°C). Bake the cheesecake for 55-60 minutes, or until the center is set but still slightly jiggly.

    Cool

    Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour. Then remove from the oven and let it cool at room temperature for another hour before refrigerating for at least 4 hours or overnight.

Prepare the Topping

    Whip the Cream

    In a medium bowl, beat the heavy whipping cream until soft peaks form.

    Add Sugar and Vanilla

    Add powdered sugar and vanilla extract to the whipped cream. Continue beating until stiff peaks form.

Serve

    Top the Cheesecake

    Once the cheesecake is chilled, spread or pipe the whipped cream on top of the cheesecake.

    Slice and Serve

    Release the sides of the springform pan, slice the cheesecake, and serve chilled.
