Crust Preparation

    Prepare the Crust

    In a mixing bowl, combine the graham cracker crumbs and sugar. Melt the unsalted butter and mix it into the crumb mixture until it resembles wet sand.

    Press the Crust

    Grease a 9-inch springform pan and firmly press the crumb mixture into the bottom of the pan. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes until golden brown. Remove from oven and let cool.

Filling Preparation

    Mix the Cream Cheese

    In a large mixing bowl, beat the cream cheese until smooth and creamy using an electric mixer.

    Add Sugar and Sour Cream

    Gradually add granulated sugar and continue to beat until well combined. Mix in the sour cream and vanilla extract until fully incorporated.

    Add Eggs

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

    Pour Filling into Crust

    Pour the cream cheese mixture over the cooled crust in the springform pan and smooth the top with a spatula.

    Bake the Cheesecake

    Bake in the preheated oven at 325°F (160°C) for 55-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour. Remove from oven and let cool to room temperature.

    Refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set completely.

Topping Preparation

    Prepare the Strawberries

    Wash and hull the fresh strawberries. Slice them in half or quarters, depending on your preference.

    Mix Topping Ingredients

    In a bowl, combine the sliced strawberries, sugar, and lemon juice. Toss gently to coat the strawberries and let them macerate for about 15-20 minutes.

    Top the Cheesecake

    Once the cheesecake is set and chilled, top it with the macerated strawberries before serving.
