Prepare the Crust
In a mixing bowl, combine the graham cracker crumbs and sugar. Melt the unsalted butter and mix it into the crumb mixture until it resembles wet sand.

Mix the Cream Cheese
In a large mixing bowl, beat the cream cheese until smooth and creamy using an electric mixer.

Add Sugar and Sour Cream
Gradually add granulated sugar and continue to beat until well combined. Mix in the sour cream and vanilla extract until fully incorporated.

Add Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Pour Filling into Crust
Pour the cream cheese mixture over the cooled crust in the springform pan and smooth the top with a spatula.

Bake the Cheesecake
Bake in the preheated oven at 325°F (160°C) for 55-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour. Remove from oven and let cool to room temperature.

Chill the Cheesecake
Refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set completely.

Prepare the Strawberries
Wash and hull the fresh strawberries. Slice them in half or quarters, depending on your preference.

Once the cheesecake is set and chilled, top it with the macerated strawberries before serving.
